Ingredients

  • 8 rice paper wraps
  • 2 cups of cooked rice noodles
  • 1 cucumber, julienned
  • 2 medium carrots, julienned
  • 1 red bell pepper, julienned
  • 1/2 cup of fresh mint leaves
  • 1/2 cup of fresh cilantro leaves
  • 1/2 cup of roasted peanuts, chopped
  • 1/4 cup of peanut butter
  • 1 tbsp of hoisin sauce
  • 1 tbsp of soy sauce
  • 1 tbsp of honey
  • 2 cloves of garlic, minced
  • 1 lime, juiced
  • 1/4 cup of warm water

Instructions

  1. Prepare all the veggies, herbs, and noodles.

  2. In a small bowl, whisk together peanut butter, hoisin sauce, soy sauce, honey, garlic, lime juice, and warm water to make a peanut dipping sauce.

  3. Fill a shallow pan with warm water and dip rice paper wrap for 10-15 seconds or until softened.

  4. Place rice paper wrap on a clean and damp kitchen towel. Add a few noodles, veggies, herbs, and peanuts on top.

  5. Fold the bottom over the filling and then fold the sides inwards. Finish rolling up tightly.

  6. Repeat with the remaining ingredients. Serve fresh spring rolls with peanut dipping sauce.
