How To Make Creamy Mushroom & Spinach Pasta

Ingredients
- 8 oz (225g) penne pasta
- 2 tbsp olive oil
- 8 oz (225g) mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup (240ml) vegetable broth
- 1 cup (240ml) heavy cream
- 2 cups (60g) baby spinach
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions

Cook the penne pasta according to package instructions. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are browned and tender.

Add the vegetable broth and bring to a simmer. Cook for 5 minutes, until the broth has reduced slightly.

Stir in the heavy cream and bring to a simmer again. Cook for another 5 minutes, until the sauce thickens slightly.

Add the cooked penne pasta and baby spinach to the skillet. Toss to coat the pasta and spinach with the creamy mushroom sauce. Cook for 2-3 minutes, until the spinach wilts.

Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
