Ingredients

  • 8 oz (225g) penne pasta
  • 2 tbsp olive oil
  • 8 oz (225g) mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup (240ml) vegetable broth
  • 1 cup (240ml) heavy cream
  • 2 cups (60g) baby spinach
  • Salt and pepper, to taste
  • Grated Parmesan cheese, for serving

Instructions

  1. Cook the penne pasta according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the mushrooms and garlic, and cook until the mushrooms are browned and tender.

  3. Add the vegetable broth and bring to a simmer. Cook for 5 minutes, until the broth has reduced slightly.

  4. Stir in the heavy cream and bring to a simmer again. Cook for another 5 minutes, until the sauce thickens slightly.

  5. Add the cooked penne pasta and baby spinach to the skillet. Toss to coat the pasta and spinach with the creamy mushroom sauce. Cook for 2-3 minutes, until the spinach wilts.

  6. Season with salt and pepper to taste. Serve hot, garnished with grated Parmesan cheese.
