Ingredients

  • 10 rice paper wrappers
  • 200g ground pork
  • 200g shrimp, peeled and deveined
  • 1 carrot, julienned
  • 1/2 onion, finely chopped
  • 2 cloves of garlic, minced
  • 100g bean sprouts
  • 1/4 cup wood ear mushrooms, soaked and finely chopped
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1/4 teaspoon black pepper
  • Cooking oil, for frying

Instructions

  1. In a mixing bowl, combine the ground pork, shrimp, carrot, onion, garlic, bean sprouts, wood ear mushrooms, fish sauce, soy sauce, sugar, and black pepper.

  2. Fill a large bowl with warm water. Dip one rice paper wrapper into the water and soak for a few seconds until soft and pliable. Place the wrapper on a clean surface.

  3. Spoon about 2 tablespoons of the filling onto the center of the wrapper. Fold the sides over the filling and then roll tightly into a cylinder shape.

  4. Heat cooking oil in a deep pan over medium heat. Fry the spring rolls for about 4-5 minutes until golden brown and crispy. Repeat with the remaining wrappers and filling.

  5. Remove the spring rolls from the pan and drain on paper towels.

  6. Serve the spring rolls with a dipping sauce of your choice, such as sweet chili sauce or fish sauce.
