Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 2 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • For the herby dumplings:
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon dried thyme
  • 1/2 cup milk
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat the oven to 350°F (180°C).

  2. In a large oven-safe skillet or casserole dish, heat the olive oil over medium heat. Add the onions, carrots, and celery and cook until they begin to soften, about 5 minutes. Add the garlic and cook for an additional minute.

  3. Push the vegetables to one side of the skillet and add the chicken to the other side. Cook the chicken until browned on all sides, about 5 minutes.

  4. Sprinkle the flour over the chicken and vegetables and stir to coat everything evenly. Cook for 1 minute.

  5. Slowly pour in the chicken broth, stirring constantly. Bring the mixture to a simmer. Add the thyme, rosemary, salt, and pepper. Cover the skillet or dish and transfer it to the oven.

  6. Bake for 1 hour, until the chicken is cooked through and the sauce has thickened.

  7. Meanwhile, prepare the dumplings. In a mixing bowl, whisk together the flour, baking powder, salt, parsley, and thyme. Pour in the milk and melted butter. Stir until just combined.

  8. Remove the casserole from the oven and increase the oven temperature to 400°F (200°C). Drop spoonfuls of the dumpling batter onto the surface of the casserole.

  9. Return the casserole to the oven, uncovered, and bake for an additional 20-25 minutes, until the dumplings are golden and cooked through.

  10. Serve the chicken casserole with herby dumplings hot.
