Serves:

Ingredients

  • 1 red bell pepper, chopped
  • 1 can of kidney beans, rinsed and drained
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tbsp of grated ginger
  • 1 can of coconut milk
  • 2 tbsp of tomato paste
  • 1 tbsp of tikka masala spice blend
  • 1 tbsp of olive oil
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pan over medium heat. Add onions, garlic, and ginger. Saute until onions are translucent.

  2. Stir in tikka masala spice blend and tomato paste. Cook for 1-2 minutes.

  3. Add chopped red pepper and kidney beans to the pan. Stir well to coat them in the spice mixture.

  4. Pour in the coconut milk. Bring to a simmer and let it cook for 15-20 minutes, until the red peppers are tender.

  5. Season with salt, to taste.

  6. Serve the tikka masala over rice or with naan bread.

  7. Garnish with fresh cilantro.
