How To Make Jacket Potato with Whipped Feta & Sumac

Ingredients

  • 4 large baking potatoes
  • 200g feta cheese
  • 2 tbsp olive oil
  • 2 tsp sumac
  • Salt and pepper, to taste
  • Fresh herbs, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Scrub the potatoes clean and pierce them a few times with a fork. Rub them with olive oil and sprinkle with salt.

  3. Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until tender when pierced with a fork.

  4. In the meantime, crumble the feta cheese into a bowl and use an electric mixer or a fork to whip it until smooth and creamy.

  5. Once the potatoes are done, remove them from the oven and let them cool slightly. Slice each potato in half lengthwise.

  6. Spoon a generous amount of whipped feta onto each potato half and sprinkle with sumac. Season with salt and pepper.

  7. Garnish with fresh herbs, such as parsley or chives, and serve hot.
