How To Make Jacket Potato with Whipped Feta & Sumac

Ingredients
- 4 large baking potatoes
- 200g feta cheese
- 2 tbsp olive oil
- 2 tsp sumac
- Salt and pepper, to taste
- Fresh herbs, for garnish
Instructions

Preheat the oven to 200°C (400°F).

Scrub the potatoes clean and pierce them a few times with a fork. Rub them with olive oil and sprinkle with salt.

Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until tender when pierced with a fork.

In the meantime, crumble the feta cheese into a bowl and use an electric mixer or a fork to whip it until smooth and creamy.

Once the potatoes are done, remove them from the oven and let them cool slightly. Slice each potato in half lengthwise.

Spoon a generous amount of whipped feta onto each potato half and sprinkle with sumac. Season with salt and pepper.

Garnish with fresh herbs, such as parsley or chives, and serve hot.
