Serves:
Ingredients
- 1 lb sausage, casings removed
- 1 leek, thinly sliced
- 2 apples, peeled, cored, and diced
- 2 cloves of garlic, minced
- 1 tsp fresh thyme leaves
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cheddar cheese, shredded
- 1 sheet of puff pastry, thawed
- 1 egg, beaten (for egg wash)
Instructions
-
Preheat the oven to 375°F (190°C).
-
In a large skillet, cook the sausage over medium heat until browned and cooked through. Remove from the skillet and set aside.
-
In the same skillet, sauté the leeks for 3-4 minutes, until softened. Add the diced apples, minced garlic, fresh thyme, salt, and black pepper. Cook for another 2-3 minutes, until the apples are slightly tender.
-
Return the cooked sausage to the skillet and stir to combine everything. Remove from heat and let the mixture cool for a few minutes.
-
Roll out the puff pastry sheet on a lightly floured surface and line a greased pie dish with it. Trim any excess pastry hanging over the edges.
-
Spoon the sausage, apple, and leek mixture into the pie dish. Sprinkle the shredded cheddar cheese on top.
-
Fold the edges of the puff pastry over the filling, creating a rustic crust. Brush the pastry with the beaten egg for a golden finish.
-
Place the pie in the preheated oven and bake for 35-40 minutes, until the crust is golden brown and the filling is bubbly.
-
Remove the pie from the oven and let it cool for a few minutes before serving. Cut into slices and enjoy!
