Total: 60 minutes

Serves:

Ingredients

  • 500g boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup plain yogurt
  • 2 tablespoons lemon juice
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons grated ginger
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1 teaspoon garam masala
  • 1 teaspoon chili powder (adjust according to spice preference)
  • 1 can (400g) crushed tomatoes
  • 1 cup heavy cream
  • Salt, to taste
  • Fresh cilantro, for garnish
  • Cooked basmati rice or naan, for serving

Instructions

  1. In a bowl, combine the yogurt, lemon juice, 1 tablespoon oil, and half of the minced garlic. Add the chicken pieces and marinate for at least 30 minutes, or overnight in the refrigerator.

  2. Preheat the grill or broiler. Thread the chicken pieces onto skewers and grill or broil until cooked through, about 10-12 minutes.

  3. In a large pan, heat the remaining tablespoon of oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the remaining minced garlic and grated ginger, and cook for another minute.

  4. Stir in the ground cumin, coriander, turmeric, paprika, garam masala, and chili powder. Cook for 1-2 minutes until fragrant.

  5. Pour in the crushed tomatoes and season with salt. Simmer for 10 minutes, allowing the flavors to meld together.

  6. Add the grilled chicken pieces to the sauce and simmer for another 5 minutes.

  7. Stir in the heavy cream and cook for an additional 2-3 minutes until heated through.

  8. Serve the chicken tikka masala over cooked basmati rice or with naan bread. Garnish with fresh cilantro.
