Ingredients

  • 2 cups runner beans, finely chopped
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1/2 tsp red chili powder
  • Salt to taste
  • 1 tbsp vegetable oil
  • 16 sheets of phyllo pastry
  • 2 tbsp melted butter for brushing

Instructions

  1. Heat oil in a pan and sauté the onions, garlic, and ginger until golden brown.

  2. Add the runner beans and cook for 5 minutes until tender.

  3. Add the spices (turmeric powder, cumin powder, coriander powder, red chili powder, and salt) and mix well.

  4. Cook for another 2 minutes, then remove from heat and let it cool.

  5. Preheat the oven to 375°F (190°C).

  6. Take one sheet of phyllo pastry and brush it with melted butter.

  7. Place another sheet on top and brush with butter again.

  8. Cut the phyllo pastry into squares.

  9. Place a spoonful of the runner bean mixture on each square.

  10. Fold the square diagonally to form a triangle and seal the edges by pressing them together.

  11. Repeat the process for the remaining squares and filling.

  12. Place the samosas on a greased baking sheet and brush them with melted butter.

  13. Bake in the preheated oven for 20-25 minutes or until golden and crispy.

  14. Serve hot with chutney or ketchup.
