How To Make Chilli & Orange Salmon with Watercress New Potatoes & Wasabi Mayo

Ingredients
- 4 salmon fillets
- 2 oranges
- 2 red chillies
- 500g new potatoes
- 2 cups of watercress
- 4 tbsp mayonnaise
- 1 tsp wasabi paste
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

Slice one orange and one chili. Place the salmon fillets on a baking tray. Season with salt and pepper, then top with the orange slices and chili slices.

Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through.

Meanwhile, boil the new potatoes in salted water until tender. Drain and set aside.

In a small bowl, mix the mayonnaise with the wasabi paste. Set aside for serving.

Cut the remaining orange into segments and finely chop the remaining chili.

In a large bowl, combine the new potatoes, orange segments, chili, and watercress. Season with salt and pepper, then toss to combine.

Serve the baked salmon on top of the watercress new potatoes and drizzle with the wasabi mayo.
