Ingredients

  • 500g chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 thumb-sized ginger, grated
  • 2 tablespoons curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 can (400ml) coconut milk
  • 2 medium potatoes, cubed
  • 2 carrots, sliced
  • 1 cup chicken broth
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Heat oil in a large pot over medium heat. Add onions, garlic, and ginger. Cook until onions are translucent and fragrant.

  2. Add chicken and cook until lightly browned.

  3. Stir in curry powder, turmeric powder, and paprika. Cook for 1-2 minutes until spices are fragrant.

  4. Pour in coconut milk and bring to a simmer. Add potatoes, carrots, and chicken broth. Season with salt and pepper. Cover and simmer for 20 minutes or until chicken and vegetables are cooked through.

  5. Add bell peppers and frozen peas. Cook for an additional 5 minutes.

  6. Serve hot over steamed rice. Garnish with chopped cilantro.
