Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1/2 cup vegetable oil
  • 2 eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  3. In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix – a few lumps are ok.

  5. Spray the waffle iron with non-stick cooking spray.

  6. Pour the batter onto the preheated waffle iron, spreading it out to the edges.

  7. Close the waffle iron and cook according to the manufacturer’s instructions, usually about 3-5 minutes or until the waffles are golden brown and crisp.

  8. Remove the waffles from the iron and repeat with the remaining batter.

  9. Serve the waffles warm with your favorite toppings.
