Ingredients

  • cupwhite whole wheat flour,or regular whole wheat flour
  • 2tspbaking powder
  • ½tspsalt
  • 2tbspsugar
  • 1large egg
  • cupcoconut milk,or lukewarm milk
  • cupvirgin coconut oil,melted, or 5 tbsp of melted butter
  • ½tspvanilla extract

Instructions

  1. Preheat the waffle iron.

  2. In a medium bowl, whisk together the whole wheat flour, baking powder, salt, and sugar.

  3. In a separate bowl, whisk together the egg, coconut milk, coconut oil and vanilla extract.

  4. Pour the wet ingredients into the dry ingredients, then mix just until combined. The batter will be a little lumpy.

  5. Cook the waffles as directed by the waffle iron manufacturer.

  6. Serve warm, and enjoy!
