Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2 tbsp chives, finely chopped
  • 1 3/4 cups milk
  • 2 eggs
  • 1/4 cup unsalted butter, melted
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 8 oz mushrooms, sliced
  • 2 tbsp olive oil

Instructions

  1. Preheat your waffle iron.

  2. In a large mixing bowl, whisk together flour, baking powder, salt, and chives.

  3. In a separate bowl, whisk together milk, eggs, and melted butter. Pour the wet mixture into the dry ingredients and stir until just combined.

  4. Grease the waffle iron with non-stick spray or melted butter. Spoon the batter onto the hot iron, close it, and cook until golden brown and crispy.

  5. While the waffles are cooking, heat olive oil in a skillet over medium heat. Add mushrooms and cook until they release their moisture and start to brown.

  6. In a small bowl, mix together maple syrup and soy sauce. Pour the mixture over the mushrooms and cook for another 2-3 minutes, until mushrooms are coated and glossy.

  7. Serve the chive waffles with the maple and soy mushrooms on top.
