  • 4tbspunsalted butter
  • ½cupall-purpose flour
  • ½cupwhole wheat flour
  • 1cupyellow whole grain corn meal
  • 2tspbaking powder
  • ½tspbaking soda
  • ½tspsalt
  • 2cupmilk
  • 6tspsugar
  • 2large eggs
  • 1tsppure vanilla extract
  • 1cupblueberries

Instructions

  1. Melt the butter and set aside to cool.

  2. Sift together flours, cornmeal, baking powder, baking soda, and salt in a medium bowl.

  3. In a large bowl, beat together milk, sugar, eggs, and vanilla until foamy.

  4. Stir in flour mixture, then add melted butter.

  5. Let rest for 30 to 40 minutes.

  6. Preheat waffle iron.

  7. Stir blueberries into batter.

  8. Cook waffles according to iron’s instructions, making sure to spray the plates before each waffle.

  9. Serve immediately with the best butter and maple syrup.

  10. Store any leftovers in the fridge, and crisp up in a 350 degrees F oven.
