How To Make Belgian Waffles with Plum Compote & Amaretto Cream

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 eggs
- 1 3/4 cups milk
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 4 plums, pitted and diced
- 2 tablespoons honey
- 1 cup heavy cream
- 2 tablespoons amaretto liqueur
- Powdered sugar, for dusting
Instructions

Preheat a waffle iron according to manufacturer’s instructions.

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, beat the eggs and then add in the milk, melted butter, and vanilla extract. Mix well.

Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.

Pour the waffle batter onto the preheated waffle iron and cook until golden and crisp.

In a small saucepan, combine the diced plums and honey. Cook over medium heat for about 5 minutes, or until the plums have softened and released their juices.

In a separate bowl, whip the heavy cream until soft peaks form. Stir in the amaretto liqueur.

Serve the Belgian waffles topped with the plum compote and a dollop of amaretto cream. Dust with powdered sugar.
