How To Make Green Eggs And Hash Omelette

  • 2eggs
  • 2cupsfresh spinachloosely packed
  • 1cupcorned beef hashlike Hormel® Mary Kitchen®
  • Black pepperfreshly ground, to taste
  • Cooking spray
  • 2tbspmozzarella cheeseshredded


  1. Combine eggs and spinach in a blender. Blend on high speed for 1 minute. Scrape down the sides of the blender.

  2. Pulse until spinach is fully blended into the eggs for about 1 minute more.

  3. Pour hash into a microwave-safe bowl. Heat in the microwave for about 1 minute, or until thoroughly warmed. Season with black pepper.

  4. Spray a non-stick skillet with cooking spray then place over medium heat.

  5. Pour in egg-spinach mixture. Cover with a lid. Cook for about 5 minutes, or until top is barely set.

  6. Place corned beef hash over 1 side of the omelet.

  7. Slide onto a plate, using the skillet to fold the other side on top. Sprinkle mozzarella cheese over omelet.

  8. Serve and enjoy.
