  • 8 prawns, peeled and deveined
  • 4 eggs
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 cup chopped spring onions
  • 2 tbsp vegetable oil

Instructions

  1. In a bowl, beat the eggs with salt, black pepper, and garlic powder.

  2. Heat oil in a non-stick pan over medium heat.

  3. Add the prawns and stir-fry for 2-3 minutes until they turn pink and opaque.

  4. Push the prawns to one side of the pan and pour the beaten eggs into the other side.

  5. Cook for 1-2 minutes or until the edges are set.

  6. Sprinkle chopped spring onions over the eggs and prawns.

  7. Fold the omelette in half and cook for another minute until fully set.

  8. Serve hot with a side of chili sauce or ketchup.
