Western Omelet Recipe

  • 32 oz hash brown potatoes frozen
  • 10 oz lean ham cubed
  • 1 medium onion chopped
  • 3 cups cheddar cheese shredded
  • 1 ¼ cups milk
  • 14 eggs
  • 1 ½ tsp salt to taste
  • 1 tsp pepper to taste


  1. In a 4-5 quart crockpot, layer in the following order: 1/3 each of hash browns, ham, onion and cheese. Repeat layers 2 times.

  2. Beat together milk, eggs, salt and pepper. 

  3. Pour over the layers in the crockpot. Cover and cook on low for 8-9 hours before serving.
