  • 8 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons butter
  • 1/2 cup shredded cheese (such as Gruyere or Cheddar)
  • 1/4 cup diced ham
  • 1/4 cup chopped fresh herbs (such as chives or parsley)

Instructions

  1. In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  2. Heat a non-stick skillet over medium heat and add the butter. Once melted, swirl the skillet to coat the bottom evenly.

  3. Pour the egg mixture into the skillet and let it cook undisturbed for a few seconds until the edges start to set.

  4. Gently push the cooked edges towards the center of the skillet using a spatula, allowing the uncooked eggs to flow to the edges.

  5. Continue this process until the omelette is mostly set but still slightly runny on top.

  6. Sprinkle the cheese, ham, and herbs evenly over one half of the omelette. Fold the other half over the filling and cook for another minute to melt the cheese and heat the filling.

  7. Slide the omelette onto a serving plate and cut into slices to serve.
