Ingredients

  • 200g self-raising flour
  • 200g caster sugar
  • 200g unsalted butter, softened
  • 4 large eggs
  • Zest of 2 lemons
  • Juice of 1 lemon
  • 2 tbsp elderflower cordial

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a rectangular baking tray.

  2. In a large bowl, cream together the butter and sugar until light and fluffy.

  3. Gradually add the eggs, one at a time, beating well after each addition.

  4. Sift in the flour and fold gently until fully combined.

  5. Stir in the lemon zest, lemon juice, and elderflower cordial.

  6. Pour the batter into the prepared baking tray and smooth the top.

  7. Bake for 25-30 minutes until golden and a skewer inserted into the center comes out clean.

  8. Remove from the oven and allow to cool in the tray for 10 minutes before transferring to a wire rack to cool completely.

  9. Slice into squares or rectangles and serve.
