Ingredients

  • 1 lb duck breast, sliced into thin strips
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric powder
  • 1/4 tsp cayenne pepper
  • 1/4 cup peanut butter
  • 1/4 cup coconut milk
  • 1 tbsp lime juice
  • Salt, to taste
  • Bamboo skewers, soaked in water

Instructions

  1. In a bowl, combine garlic, ginger, soy sauce, fish sauce, brown sugar, cumin, coriander, turmeric powder, and cayenne pepper. Mix well to make the marinade.

  2. Add the sliced duck breast to the marinade, ensuring each strip is coated. Marinate for at least 1 hour, or overnight for more flavor.

  3. Preheat the grill or grill pan over medium heat.

  4. Thread the marinated duck onto the soaked bamboo skewers.

  5. Grill the skewers for about 5-7 minutes per side, or until the meat is cooked through and slightly charred.

  6. In a small saucepan, heat peanut butter, coconut milk, lime juice, and salt over low heat. Stir until smooth and heated through.

  7. Serve the grilled duck skewers with the peanut sauce on the side.
