Ingredients

  • 8 oz. soba noodles
  • 8 oz. enoki mushrooms
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp grated ginger
  • 1 clove garlic, minced
  • 1 green onion, thinly sliced
  • Salt and pepper to taste

Instructions

  1. Cook soba noodles according to package instructions, then drain and rinse with cold water.

  2. Trim the root ends of the enoki mushrooms and separate them into small clusters.

  3. In a small bowl, whisk together the sesame oil, soy sauce, rice vinegar, grated ginger, minced garlic, salt, and pepper.

  4. In a large skillet, heat the sauce over medium-high heat. Add the enoki mushrooms and cook for 3-4 minutes, until softened and lightly browned.

  5. Add the cooked soba noodles to the skillet and toss to coat with the sauce. Cook for an additional 2-3 minutes, until heated through.

  6. Serve hot, garnished with sliced green onions.
