How To Make Roasted Sweet Potato Salad

  • 2largesweet potatoescut into ¼-inch cubes
  • 1largeonioncut into ¼-inch pieces
  • 1tbspoil
  • 15ozgarbanzo beansdrained
  • 1largetomatocut into ¼-inch pieces
  • ½cupcilantrofresh, chopped
  • 2tbspginger rootfresh, minced
  • 1limejuiced
  • 1clovegarlicminced


  1. Preheat the oven to 400 degrees F.

  2. Combine sweet potatoes and onion in a large bowl. Add oil and toss to coat. Spread onto a large baking sheet.

  3. Bake in the preheated oven for about 30 minutes, until crisp-tender. Remove from the oven and allow to cool slightly for about 10 minutes.

  4. While the vegetables are cooling, combine garbanzo beans, tomato, and cilantro in a large bowl. Combine ginger, lime juice, and garlic in a small bowl.

  5. Add cooled vegetables to the garbanzo bean mixture, pour lime dressing over top, and toss to combine.

  6. Chill in the refrigerator for about 1 hour, until flavors have combined. Then serve and enjoy!

If canned garbanzo beans are not available, you can use 2 cups of cooked garbanzo beans instead.
