How To Make Roasted Sweet Potato Salad

Ingredients
- 2largesweet potatoescut into ¼-inch cubes
- 1largeonioncut into ¼-inch pieces
- 1tbspoil
- 15ozgarbanzo beansdrained
- 1largetomatocut into ¼-inch pieces
- ½cupcilantrofresh, chopped
- 2tbspginger rootfresh, minced
- 1limejuiced
- 1clovegarlicminced
Instructions

Preheat the oven to 400 degrees F.

Combine sweet potatoes and onion in a large bowl. Add oil and toss to coat. Spread onto a large baking sheet.

Bake in the preheated oven for about 30 minutes, until crisp-tender. Remove from the oven and allow to cool slightly for about 10 minutes.

While the vegetables are cooling, combine garbanzo beans, tomato, and cilantro in a large bowl. Combine ginger, lime juice, and garlic in a small bowl.

Add cooled vegetables to the garbanzo bean mixture, pour lime dressing over top, and toss to combine.

Chill in the refrigerator for about 1 hour, until flavors have combined. Then serve and enjoy!
