How To Make African Sweet Potato Salad

A colorful salad loaded with sweet potatoes, fresh vegetables, and a tangy dressing.

Ingredients

  • 2 medium sweet potatoes, peeled and diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 small red onion, diced
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp cumin
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.

  2. Toss sweet potatoes with olive oil, cumin, salt and pepper.

  3. Roast for 25 minutes or until tender.

  4. In a small bowl whisk together honey, apple cider vinegar, salt and pepper.

  5. In a large bowl, combine the roasted sweet potato, diced bell peppers, diced red onion, and chopped cilantro.

  6. Pour dressing over salad and toss well to coat.
