Raised in Ohio, fall meant Ohio State Football, falling leaves, comfort foods, pumpkins and apples. My family made every conceivable recipe using apples. While I have hundreds of favorites. I picked this one because I served this at bridal and baby showers, and especially girls night, which was usually Uker card night. This is fast, colorful and tasty. You can use any apple as long as the apple is fresh and crisp.

How To Make Johnny’s Chunky Chicken Salad Stuffed Apples

  • 4 cups skinless and boneless chicken breast (cooked and cubed)
  • 2 cups celery (diagonally sliced)
  • 1 cup white onion (diced into small pieces)
  • 1/2 cup Hellman mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tsp fresh dill
  • kosher salt (to taste)
  • freshly ground black pepper (to taste)
  • 6 large fresh red delicious apples (washed and dried)
  • 2 tbsp fresh lemon juice
  • raisins
  • pine nuts
  1. In a large bowl, toss the chicken breast, celery, and onions. Set aside afterward.
  2. Mix the Hellman mayonnaise, Dijon mustard, dill, salt, and pepper. Fold this mayonnaise mixture into the chicken mixture, then chill it for at least one hour.
  3. Slice the top portion of each apple, then brush it with lemon juice.
  4. Using a small scoop or grapefruit spoon, remove the inside of each apple. Make sure to leave about 1/3 from each apple to firmly hold the salad.
  5. Brush the inside of each apple with lemon juice. After doing that, slice just the bottom portion of the apple so it can stand firmly on the serving plate.
  6. Equally stuff all the apples with the chicken salad. Then on pre-chilled plates, place the stuffed portion of the apple on the sliced portion. After that, cover it diagonally with the sliced top portion.
  7. Serve the stuffed apples immediately or chill it for 15 minutes and serve. Feel free to garnish it with a few raisins and pinenuts. Enjoy!

Ingredients

  • ½ cup mayonnaise
  • 2 tbsp Dijon mustard
  • 2 tsp fresh dill
  • Salt & ground black pepper , to taste
  • 6 large fresh red delicious apples, washed and dried
  • 2 tbsp fresh lemon juice

To serve:

  • ¼ cup raisins
  • ¼ cup cashew nuts

Instructions

  1. In a large bowl, combine the chicken breast, celery, onions, mustard, & mayonnaise
  2. Season to taste with salt & pepper. Adjust accordingly then set aside in a chilled area for at least one hour.
  3. Slice the top portion of each apple, then brush it with lemon juice.
  4. Using a small scoop or grapefruit spoon, remove the inside of each apple. Make sure to leave about ⅓ from each apple to firmly hold the salad.
