How To Make Roasted Potatoes and Carrots

  • lbspotatoescut into 1-inch cubes
  • 1lbcarrotspeeled
  • 1oniondiced
  • 3tbspolive oil
  • 1tspItalian seasoning
  • salt and pepperto taste


  1. Preheat the oven to 425 degrees F.

  2. Cut the potatoes and carrots into large chunks, approximately the same size.

  3. Toss the potatoes, carrots and onions with olive oil and Italian seasoning.

  4. Season with salt and pepper.

  5. Place on a large pan, then roast for 40 to 50 minutes or until tender.

  6. Serve warm, and enjoy!
