How To Make Rotelle Pasta with Bacon, Watercress and Cherry Tomatoes

Peppery watercress, filling bacon, and juicy tomatoes makes this rotelle pasta a truly filling dish with a medley of savory flavors!

Total: 18 minutes

Serves:

Ingredients

  • ½lbbacon,sliced
  • cupcherry tomatoes
  • 1tspsalt
  • ¾tspfresh ground black pepper
  • 5ozwatercress,(1 bunch)
  • ¾lbrotelle
  • 2tbspbutter
  • 2tbspolive oil
  • 1scallion,including green top
  • parmesan Cheese,grated

Instructions

  1. In a large frying pan, cook the bacon for about 5 minutes until golden brown and just crisp.

  2. Remove with a slotted spoon and drain on paper towels. Pour off all but 1 teaspoon of the fat.

  3. Add the tomatoes, salt and pepper to the pan. Cook over moderate heat, stirring, for about 3 minutes until the tomatoes soften slightly.

  4. Add the watercress and cook, stirring, about 1 minute until just wilted.

  5. In a large pot of boiling, salted water, cook the rotelle for about 12 minutes until just done. Reserve ¾ cup of the pasta water.

  6. Drain the pasta and toss with the bacon, ½ cup of the reserved pasta water, the tomato mixture, the butter and the olive oil. If the pasta seems dry, add more of the reserved pasta water.

  7. Top with the sliced scallions, serve with grated Parmesan, and enjoy!
