Ingredients

  • 8 oz spinach noodles
  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 cup baby spinach
  • 1/2 cup sliced mushrooms
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Cook the spinach noodles according to package instructions. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 2 minutes.

  3. Add the baby spinach and sliced mushrooms to the skillet. Cook until the spinach wilts and the mushrooms are tender, about 5 minutes.

  4. Add the cooked spinach noodles to the skillet and toss to combine. Cook for an additional 2 minutes, until everything is heated through.

  5. Remove from heat and sprinkle with grated Parmesan cheese. Season with salt and pepper to taste.

  6. Serve hot and enjoy!
