How To Make Chicken Gnocchi in Pesto Sauce

Take a gander at this savory meal of chicken and gnocchi. It comes with rich flavors of pesto and Italian seasoning, bringing a new twist to your usual gnocchi dish.

  • 1 lb gnocchi, dry, cooked and cooled
  • 12 oz chicken breasts, boneless and skin-on
  • 4 tbsp olive oil, divided
  • salt and ground black pepper, to taste

For Spinach Pesto:

  • 4 cups spinach leaves, trimmed, washed, and patted dry
  • ½ cup walnuts, roasted
  • ½ cup olive oil
  • ¼ cup parmesan cheese, grated or powdered
  • 4 cloves garlic
  • 1 tbsp lemon juice, or lime juice
  • salt and ground black pepper, to taste


  1. Divide spinach into two batches. Put the first batch of spinach with all the ingredients in the food processor, pulse until pureed. Add the remaining spinach and pulse until smooth.
  2. Season with salt and pepper. Set aside.
  3. Season the chicken breasts on both sides with salt and pepper.
  4. Heat up a skillet with 2 tablespoons of oil, then sear your chicken on all sides evenly. Remove chicken from the skillet and set aside.
  5. Using the same skillet. Put the remaining oil, add the gnocchi, Chicken then Pesto. Toss until well-mixed.
  6. Season with salt and pepper to taste.
  7. Serve immediately. You may garnish with parmesan cheese and crushed walnuts.

What kind of gnocchi should I use?

You can use classic potato gnocchi as these have a light and springy texture to match perfectly with the chicken. If you prefer gnocchi made with more flour, try using the Gnocchi Parisienne or a Malloreddus. Gnocchi Parisienne is more like a choux pastry of flour, milk, butter, and salt, and tend to be much lighter and melts in your mouth. Malloreddus, on the other hand, is made of semolina flour and water flavored with some saffron. These gnocchi can absorb more sauce, giving you more flavor. 

What can I substitute for white wine?

If you prefer not to cook with white wine, worry not – we’ve got a couple of substitutes for you! The white wine is there to add acidity to your pasta dish. For this, we recommend using the same amount of apple cider vinegar to substitute the wine. Another great substitute would be white grape juice. For this, you will need to adjust the juice a bit by adding a bit more vinegar or lemon for balance. But if you have none of these on hand, using ⅓ cup of water for our recipe will do just fine. While it may not have additional flavor, it will help to add needed liquid for the dish.
