Ingredients

  • 1 lb gnocchi, dry, cooked and cooled
  • 12 oz chicken breasts, boneless and skin-on
  • 4 tbsp olive oil, divided
  • salt and ground black pepper, to taste

For Spinach Pesto:

  • 4 cups spinach leaves, trimmed, washed, and patted dry
  • ½ cup walnuts, roasted
  • ½ cup olive oil
  • ¼ cup parmesan cheese, grated or powdered
  • 4 cloves garlic
  • 1 tbsp lemon juice, or lime juice
  • salt and ground black pepper, to taste

Instructions

  1. Divide spinach into two batches. Put the first batch of spinach with all the ingredients in the food processor, pulse until pureed. Add the remaining spinach and pulse until smooth.
  2. Season with salt and pepper. Set aside.
  3. Season the chicken breasts on both sides with salt and pepper.
  4. Heat up a skillet with 2 tablespoons of oil, then sear your chicken on all sides evenly. Remove chicken from the skillet and set aside.
  5. Using the same skillet. Put the remaining oil, add the gnocchi, Chicken then Pesto. Toss until well-mixed.
  6. Season with salt and pepper to taste.
  7. Serve immediately. You may garnish with parmesan cheese and crushed walnuts.
