How To Make Chicken Dijon Pasta Salad

  • 4 oz penne or fusilli pasta (cooked & cooled)
  • 8 oz yogurt or sour cream
  • ⅓ cup toasted breadcrumbs (plus extra to garnish)
  • 3 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • Salt & ground black pepper (to taste)
  • 1¼ cup chicken breasts without skin (cooked & diced)
  • ¾ cup broccoli florets (blanched & cooled)
  • ½ cup tomatoes (small dice & seeded)
  • ⅓ cup red onions (small dice)
  • ¼ cup black olives (pitted)
  1. In a mixing bowl, combine the yogurt or sour cream, vinegar, mustard. Mix until well incorporated.
  2. Season to taste with salt & ground pepper. Adjust accordingly.
  3. In another mixing bowl, combine the rest of the ingredients, except for ¼ cup of chicken breasts & breadcrumbs.
  4. Pour in your salad dressing & mix further to combine.
  5. Top the salad with the remaining chicken breasts & breadcrumbs.

Ingredients

  • 3 tbsp red wine vinegar
  • 1 tbsp dijon mustard
  • Salt & ground black pepper , to taste
  • cup chicken breasts without skin, cooked & diced
  • ¾ cup broccoli florets, blanched & cooled
  • ½ cup tomatoes, small dice & seeded
  • cup red onions, small dice
  • ¼ cup black olives, pitted

Instructions

  1. In a mixing bowl, combine the yogurt or sour cream, vinegar, mustard. Mix until well incorporated.

  2. Season to taste with salt & ground pepper. Adjust accordingly.
