Ingredients
- 1 lb ground beef
- 1/4 cup bread crumbs
- 1/4 cup black beans, mashed
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1/2 tsp ginger, grated
- 1/4 tsp red pepper flakes
- Salt and pepper, to taste
- 8 oz noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1/2 cup broccoli florets
- 1/2 cup carrots, sliced
- 1/2 cup bell pepper, sliced
- 1/4 cup soy sauce
- 2 tbsp oyster sauce
- 1 tbsp honey
- 2 green onions, sliced
Instructions

Preheat oven to 375°F (190°C).

In a large bowl, combine ground beef, bread crumbs, mashed black beans, onion, minced garlic, soy sauce, sesame oil, ginger, red pepper flakes, salt, and pepper. Mix well.

Shape the mixture into meatballs, about 1 inch in diameter, and place them on a baking sheet. Bake for 20-25 minutes or until cooked through.

While the meatballs are baking, cook the noodles according to package instructions. Drain and set aside.

In a large skillet, heat vegetable oil over medium-high heat. Add minced garlic and cook for 1 minute.

Add broccoli, carrots, and bell pepper to the skillet. Stir-fry for 3-4 minutes or until the vegetables are crisp-tender.

In a small bowl, whisk together soy sauce, oyster sauce, and honey. Pour the sauce over the vegetables in the skillet and stir to coat.

Add the cooked noodles to the skillet and toss to combine with the sauce and vegetables. Cook for an additional 2-3 minutes, until heated through.

Serve the black bean beef meatballs on top of the stir-fried noodles. Garnish with sliced green onions.
