- 1 onion, diced
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 cup frozen peas
- 2 tablespoons soy sauce
- 1 tablespoon gochujang (Korean red pepper paste)
- 2 eggs, beaten
- 2 green onions, chopped
Instructions
-
Heat vegetable oil in a large pan or wok over medium heat. Add diced onion and minced garlic, and sauté until onion becomes translucent.
-
Add diced carrot and frozen peas to the pan, and cook for 3-4 minutes until vegetables are tender.
-
Add cooked rice to the pan, breaking up any clumps with a spatula. Stir-fry for 5-6 minutes until rice is heated through.

In a small bowl, whisk together soy sauce and gochujang. Pour this mixture over the fried rice and stir well to coat.
-
Push the rice mixture to one side of the pan, creating a well. Pour the beaten eggs into the well and scramble them until cooked.
-
Mix the scrambled eggs with the rice, then add chopped green onions. Stir everything together and cook for another 2-3 minutes.
-
Remove from heat and serve hot.
