Ingredients

  • 1 block of firm tofu, cubed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1 bell pepper, sliced
  • 1 carrot, sliced
  • 1 cup of coconut milk
  • 2 tablespoons of curry powder
  • 1 tablespoon of soy sauce
  • 1 tablespoon of vegetable oil
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Add onions and garlic, and sauté until onions are translucent.

  2. Add the tofu cubes and cook until golden brown on all sides.

  3. Add bell pepper and carrot slices, and cook for another 3-4 minutes until vegetables are slightly tender.

  4. In a small bowl, mix together curry powder and soy sauce. Pour the mixture into the pan and stir well to coat the vegetables and tofu.

  5. Pour in the coconut milk and bring to a simmer. Cook for 10-15 minutes, stirring occasionally.

  6. Season with salt to taste.

  7. Serve the tofu curry over rice or with naan bread. Garnish with fresh cilantro.
