  • 1.5 lbs chicken pieces, bone-in and skin-on
  • 2 tbsp Jamaican curry powder
  • 1 tsp allspice
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 scotch bonnet pepper, seeded and minced (optional for extra heat)
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish


  1. In a large bowl, season the chicken pieces with curry powder, allspice, paprika, dried thyme, salt, and pepper. Mix well to coat the chicken evenly.

  2. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Add the chicken pieces and cook until browned on all sides, about 5 minutes. Remove the chicken from the pot and set aside.

  3. In the same pot, add the sliced onion, minced garlic, and minced scotch bonnet pepper (if using). Cook until the onions are softened and translucent, about 5 minutes.

  4. Return the chicken to the pot and pour in the coconut milk and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes or until the chicken is cooked through and tender.

  5. Taste and adjust seasonings if needed. If desired, remove the scotch bonnet pepper before serving.

  6. Serve the Jamaican Style Curry Chicken hot, garnished with fresh cilantro. Serve with rice and peas or roti bread on the side.
