Ingredients

  • 500g boneless chicken, cut into cubes
  • 2 tbsp Cape Malay curry powder
  • 1 tsp turmeric powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 green chili, chopped
  • 1 cup coconut milk
  • 1 cup chicken broth
  • 2 tbsp vegetable oil
  • Salt and pepper to taste
  • For the yellow rice:
  • 2 cups basmati rice
  • 1 tsp turmeric powder
  • 4 cups water
  • Salt to taste

Instructions

  1. In a large bowl, combine the Cape Malay curry powder, turmeric powder, cumin, coriander, paprika, salt, and pepper. Add the chicken cubes and toss to coat evenly.

  2. Heat the vegetable oil in a large skillet over medium heat. Add the sliced onion, minced garlic, and chopped green chili. Cook until the onion is soft and translucent.

  3. Add the marinated chicken to the skillet and cook until browned on all sides.

  4. Pour in the coconut milk and chicken broth. Bring to a simmer and let it cook for 30 minutes, or until the chicken is cooked through and tender.

  5. While the curry is cooking, prepare the yellow rice. Rinse the basmati rice until the water runs clear. In a medium saucepan, combine the rice, turmeric powder, water, and salt. Bring to a boil and then reduce the heat, cover, and let it simmer for 15 minutes, or until the rice is cooked and fluffy.

  6. Serve the Cape Malay chicken curry over the yellow rice. Enjoy!
