Ingredients

  • 2 large sweet potatoes, peeled and cubed
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 can of coconut milk
  • 2 tablespoons of red curry paste
  • 1 tablespoon of soy sauce
  • 1 tablespoon of brown sugar
  • 1 tablespoon of lime juice
  • 1 tablespoon of vegetable oil
  • Salt and pepper to taste
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic and sauté until fragrant.

  2. Add the sweet potatoes and bell pepper to the pot and cook for about 5 minutes, until slightly softened.

  3. In a small bowl, whisk together the coconut milk, red curry paste, soy sauce, brown sugar, and lime juice. Pour the mixture into the pot with the sweet potatoes.

  4. Bring the curry to a simmer and let it cook for about 15 minutes, or until the sweet potatoes are tender.

  5. Season with salt and pepper to taste.

  6. Serve the sweet potato and coconut curry over rice or with naan bread.

  7. Garnish with fresh cilantro before serving.
