How To Make Skillet Curried Chicken

Best served over rice, this one-pan curried chicken combines tender chicken, savory chutney, and fresh bell pepper with curry powder for a tasty dish.

Preparation: 15 minutes
Cooking: 45 minutes
Total: 1 hour

Ingredients

  • lbschicken pieces,cut up
  • 3tbspolive oil
  • 3tbspcurry powder
  • 12ozchutney,(1 jar)
  • 1red bell pepper,thinly sliced
  • 1lime,cut into wedges
  • cupgreen onion,chopped for topping
  • ¼cuppeanuts,chopped

Instructions

  1. Rinse chicken and pat dry. In a large skillet heat oil until almost hot. Add chicken, skin side down. Brown chicken until lightly browned on both sides.

  2. Add curry powder, chutney, and red bell pepper. Simmer 30 minutes over medium-low heat.

  3. Top chicken with lime wedges, chopped scallions, and peanuts. Serve immediately.
