Ingredients
- 4 chicken breasts
- 2 tbsp green curry paste
- 1 cup coconut milk
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 4 kaffir lime leaves, thinly sliced
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Preheat the oven to 375°F (190°C).

Season the chicken breasts with salt and pepper.

In a large skillet, heat the oil over medium-high heat. Add the chicken breasts and sear until golden brown on both sides, about 2-3 minutes per side.

Remove the chicken from the skillet and place in a baking dish.

In a small bowl, whisk together the green curry paste, coconut milk, fish sauce, lime juice, minced garlic, and sliced kaffir lime leaves.

Pour the dressing over the chicken in the baking dish, making sure to coat each breast evenly.

Cover the baking dish with foil and bake for 30-35 minutes, or until the chicken is cooked through and no longer pink in the center.

Remove from the oven and let the chicken rest for a few minutes before serving.

Garnish with fresh cilantro and serve with steamed rice or noodles.
