Ingredients
- 1 lb prawns, peeled and deveined
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp laksa curry paste
- 1 can (14 oz) coconut milk
- 2 cups chicken broth
- 1 cup mixed vegetables (such as bell peppers, carrots, and snow peas)
- 4 oz rice noodles
- 2 tbsp fish sauce
- 1 tbsp lime juice
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the onion, garlic, and ginger, and sauté until fragrant, about 2 minutes.

Add the laksa curry paste and cook for another minute.

Pour in the coconut milk and chicken broth, and bring to a simmer.

Add the prawns and mixed vegetables, and cook for 4-5 minutes until the prawns are pink and cooked through.

Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.

Stir in the fish sauce and lime juice into the curry mixture.

Divide the rice noodles among 4 bowls, and ladle the curry mixture over the noodles.

Garnish with fresh cilantro and serve with lime wedges.
