  • 4 chicken breasts, boneless and skinless

  • 1 teaspoon turmeric powder
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) coconut milk
  • 1 cup chicken broth
  • 2 tablespoons cornstarch
  • Fresh cilantro, for garnish

Instructions

  1. In a small bowl, combine the curry powder, turmeric, paprika, salt, and black pepper. Rub the mixture onto the chicken breasts, making sure to coat all sides.

  2. Heat the vegetable oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Push the onions and garlic to one side of the skillet and add the chicken breasts. Cook for 5-6 minutes on each side, until browned and cooked through.

  4. In a separate bowl, whisk together the coconut milk, chicken broth, and cornstarch until smooth. Pour the mixture into the skillet, stirring to combine with the onions and garlic.

  5. Bring the mixture to a simmer and cook for an additional 10 minutes, until the sauce has thickened and the flavors have melded together.

  6. Serve the curried coconut chicken over rice or with naan bread. Garnish with fresh cilantro.
