  • 3tbspVegetable Oil
  • cupall-purpose flour
  • 2red bell peppersribs and seeds removed, chopped
  • 1mediumonionfinely chopped
  • 2garlic clovesminced
  • 1tspdried oregano
  • 1tbsptomato paste
  • 4cupschicken broth
  • 1tbspHot sauceoptional
  • Coarse salt and ground pepper
  • 10ozokrafrozen, sliced
  • 8ozsausagesmoked
  • 4cupschickenshredded
  • ½lbshrimplarge


  1. In a large Dutch oven or heavy-bottomed pot, heat the oil over medium.

  2. Add flour, and cook, whisking constantly, until pale golden, 5 to 7 minutes.

  3. Stir in bell peppers, onion, garlic, and oregano; season with salt and pepper to taste.

  4. Cook, stirring occasionally, until vegetables have started to soften, 5 to 7 minutes.

  5. Add the chicken broth, tomato paste and hot sauce if using.

  6. Stir in the okra, chicken, and sausage. Bring to a boil, and turn the heat down to medium. Stir in the shrimp and cook for 2 to 3 minutes or until shrimp are pink and cooked through.

  7. Season with salt and pepper to taste and serve.
