  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups seafood stock
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 1/2 tsp cayenne pepper
  • 1 bay leaf
  • 1 lb shrimp, peeled and deveined
  • 1 lb crabmeat
  • 1 lb smoked sausage, sliced
  • 2 tbsp file powder
  • Cooked white rice, for serving
  • Green onions, sliced, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the flour and cook, stirring constantly, until the mixture turns dark brown, about 15-20 minutes, making a roux.

  2. Add the diced onion, bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

  3. Stir in the diced tomatoes, seafood stock, salt, paprika, dried thyme, cayenne pepper, and bay leaf. Bring to a boil and then reduce heat to low. Simmer for 1 hour, stirring occasionally.

  4. Add the shrimp, crabmeat, and sliced sausage to the pot. Simmer for another 15 minutes, or until the seafood is cooked through.

  5. Stir in the file powder and cook for an additional 5 minutes to thicken the gumbo.

  6. Serve the Seafood File Gumbo over cooked white rice. Garnish with sliced green onions.
