How To Make Slow Cooker Chicken Gumbo with Shrimp Recipe

- 1 lb chicken breasts, boneless and skinless, diced
- 1 lb shrimp, peeled and deveined
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper, to taste
- 1/4 cup all-purpose flour
- 1/4 cup vegetable oil
- 2 cups cooked white rice
- Chopped fresh parsley, for garnish
Instructions

In a slow cooker, combine chicken, shrimp, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, bay leaves, thyme, oregano, paprika, cayenne pepper, salt, and pepper.

Cook on low heat for 4 hours.

In a small bowl, mix flour and vegetable oil to create a roux.

Stir the roux into the gumbo and cook for an additional 30 minutes.

Serve the gumbo over cooked white rice and garnish with chopped parsley.
