Ingredients

  • 1 lb chicken breasts, boneless and skinless, diced
  • 1 lb shrimp, peeled and deveined
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper, to taste
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 2 cups cooked white rice
  • Chopped fresh parsley, for garnish

Instructions

  1. In a slow cooker, combine chicken, shrimp, onion, bell pepper, celery, garlic, diced tomatoes, chicken broth, bay leaves, thyme, oregano, paprika, cayenne pepper, salt, and pepper.

  2. Cook on low heat for 4 hours.

  3. In a small bowl, mix flour and vegetable oil to create a roux.

  4. Stir the roux into the gumbo and cook for an additional 30 minutes.

  5. Serve the gumbo over cooked white rice and garnish with chopped parsley.
