How To Make Easy Chicken Gumbo

Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon vegetable oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup okra, sliced
- 4 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Cooked rice, for serving
- Fresh parsley, for garnish
Instructions

In a large pot, heat the vegetable oil over medium heat. Add the chicken and cook until browned on all sides. Remove the chicken from the pot and set aside.

In the same pot, add the onion, bell pepper, celery, and garlic. Cook until the vegetables are softened, about 5 minutes.

Add the diced tomatoes, okra, chicken broth, Cajun seasoning, dried thyme, bay leaf, and the reserved cooked chicken to the pot. Season with salt and pepper to taste.

Bring the gumbo to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes.

Serve the chicken gumbo over cooked rice. Garnish with fresh parsley.
