How To Make Yvonne’s Gumbo Recipe
A spicy Creole stew made with chicken, sausage, shrimp, and okra, served over rice.
Serves:
Ingredients
- 1/2 cup vegetable oil
- 1/2 cup all-purpose flour
- 1 onion, diced
- 1 green bell pepper, diced
- 3 celery stalks, diced
- 4 garlic cloves, minced
- 1 tbsp Cajun seasoning
- 8 cups chicken broth
- 2 cups diced cooked chicken
- 2 cups sliced smoked sausage
- 1 cup sliced okra
- 1 lb large shrimp, cleaned and deveined
- Salt and black pepper, to taste
- Cooked white rice, for serving
- Chopped fresh parsley, for garnish
Instructions
-
Heat the vegetable oil in a large pot over medium heat. Add the flour and stir constantly to make a roux, cooking for about 20 minutes or until it turns a dark brown color.
-
Add the onion, bell pepper, and celery, and cook for about 10 minutes or until the vegetables are softened.
-
Add the garlic and Cajun seasoning and cook for another minute.
-
Slowly pour in the chicken broth, stirring constantly to prevent lumps from forming.
-
Add the chicken, sausage, and okra, and bring to a boil.
-
Reduce heat to low, cover, and simmer for about 1 hour or until the gumbo thickens and the flavors meld together.
-
Add the shrimp and cook for 5-7 minutes or until they turn pink and are cooked through.
-
Season with salt and black pepper to taste.
-
Serve the gumbo over cooked white rice and garnish with chopped fresh parsley.
