A hearty, flavorful gumbo with veggies and spices that are slow-cooked to perfection.

Serves:

Ingredients

  • 1 green bell pepper, diced
  • 1 yellow onion, diced
  • 3 celery stalks, diced
  • 4 cloves of garlic, minced
  • 1 can of diced tomatoes (14 oz)
  • 1 can of red kidney beans, drained and rinsed (15 oz)
  • 1 can of okra, drained (14 oz)
  • 4 cups of vegetable broth
  • 1 tbsp of Cajun seasoning
  • Salt and pepper to taste
  • Cooked brown rice (optional)

Instructions

  1. In a slow cooker, combine all the ingredients (except rice) and stir to combine.

  2. Cover and cook on high for 4-6 hours (or low for 8-10 hours), until the veggies are tender.

  3. Serve hot with cooked brown rice (if desired).
