Ingredients
- 1 green bell pepper, diced
- 1 yellow onion, diced
- 3 celery stalks, diced
- 4 cloves of garlic, minced
- 1 can of diced tomatoes (14 oz)
- 1 can of red kidney beans, drained and rinsed (15 oz)
- 1 can of okra, drained (14 oz)
- 4 cups of vegetable broth
- 1 tbsp of Cajun seasoning
- Salt and pepper to taste
- Cooked brown rice (optional)
Instructions

In a slow cooker, combine all the ingredients (except rice) and stir to combine.

Cover and cook on high for 4-6 hours (or low for 8-10 hours), until the veggies are tender.

Serve hot with cooked brown rice (if desired).
