Ingredients

  • 1 lb. catfish fillets, cut into bite-sized pieces
  • 1 cup sliced okra
  • 1 cup chopped onion
  • 1 cup chopped green pepper
  • 1 cup chopped celery
  • 1 tbsp. chopped garlic
  • 1/4 cup all-purpose flour
  • 1/4 cup vegetable oil
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz.)
  • 1 tsp. dried thyme
  • 1 tsp. paprika
  • Salt and pepper to taste
  • Cooked white rice for serving

Instructions

  1. In a large pot, heat the oil over medium-high heat. Add the flour and whisk together until it turns into a roux.

  2. Add the onion, green pepper, celery, and garlic to the pot and cook until softened, about 5 minutes.

  3. Gradually add the chicken broth, whisking constantly to prevent lumps.

  4. Add the tomatoes, thyme, paprika, and salt and pepper to taste. Bring the mixture to a simmer and let it cook for 20 minutes, stirring occasionally.

  5. Add the catfish and okra to the pot and continue to simmer for 25-30 minutes until the catfish is fully cooked and the okra is tender.

  6. Serve hot over cooked white rice.
