Ingredients

  • 1 cup almond flour
  • 1/4 cup coconut flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup butter, softened
  • 1/2 cup erythritol
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 cup unsweetened raisins

Instructions

  1. Preheat oven to 350°F.

  2. In a mixing bowl, combine almond flour, coconut flour, baking powder, and salt.

  3. In a separate bowl, cream together butter and erythritol. Beat in egg and vanilla.

  4. Add dry ingredients to wet and mix well. Fold in raisins.

  5. Using a cookie scoop, form 12 dough balls on a lined baking sheet. Flatten slightly with a fork.

  6. Bake for 12-15 minutes until golden brown. Cool on a wire rack.
